This Stuffed Pepper recipe is perfect for leftovers! Not only did it feed my family of 4, but I was able to eat leftovers for lunch the next day.
Stuffed peppers are quick and easy to make, and are appealing to the whole family. It is a good go-to recipe to keep on hand for school nights, late work nights, or anytime you are in a rush.

Whole30 Stuffed Peppers
Ingredients
1 lb ground meat
5 bell peppers cut in half and de-seeded
1 onion diced
1 tbsp oil
1 cup riced vegetables
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tbsp Italian seasoning
1tsp sage
Instructions
Preheat oven to 425 * F.
Saute onions for 5 minutes or until soft in your oil of choice. I used coconut oil, but olive oil or ghee would be fine as well.
Add ground meat to pan and cook until no longer pink, breaking it up as it cooks.
Add spices and riced vegetables and stir. Cook for an additional 5 minutes.
Place halved peppers in an oven safe dish and fill with meat mixture.
Bake for 20 minutes. Serve immediately, and enjoy!
