Almond Flour Pancakes

I am having fun with my food freedom and figuring out what foods have a place in my diet. Turns out, they all do, but with moderation. 15 years of yoyo dieting has brought me to balance.


These pancakes are great on almost any diet/style of eating you prefer. They are low carb, grain free, gluten free, dairy free, Paleo, and Keto. You could call them whole30 if you were into bending the rules, but they are a recreation of a sweet cakey syrupy food, so give them a pass if you're doing a round of whole30.



Ingredients:


1.5 cup almond flour

3 eggs

1 ripe banana


Directions:


1. Fork mash banana in a medium sized bowl until most lumps are gone

2. Add eggs and whisk together until smooth

3. Add almond flour and mix to combine

4. Heat up your frying pan on medium-low setting and add cooking oil of your choice

5. Pour mixture in 1-2 tablespoons at a time to form round pancakes

6. Cook for 2-3 minutes each side until starting to brown

7. Top with your desired toppings and enjoy!


Topping suggestions:


Nut butters, butter, syrup, honey, jam, fruit, agave nectar, whipped cream etc.
