Stuffed Peppers



If you're following me on social media, you'll see that I am working on moderation and finding balance in my eating habits. So this recipe is NOT Whole30 compliant, or Paleo, or Keto, or anything. It's just some healthy food that I enjoyed with my family. It is, however, gluten free and probably pretty low calorie if you're counting calories.


This is a great dish to change up the ingredients based on your preferences, though. There are some easy substitutions below the recipe for you to check out that will help you make this suit to your eating needs if you keep scrolling!


Ingredients


1 cup dry minute rice

1 cup water

2lbs ground beef

1 can tomato sauce

1 cup shredded cheese

6-8 peppers

1 diced onion

1tsp garlic powder

1tbsp Italian seasoning

Salt and pepper to taste


Directions


1. Preheat oven to 350 degrees

2. Cook rice according to directions

3. Brown ground beef, drain grease

4. Cut off the stems of the peppers and de-seed them, taking out as much of the membranes as you can

5. Arrange peppers in an oven safe dish with open side facing up.

6. In a large bowl, mix together ground beef, rice, tomato sauce, and seasoning and stuff inside peppers. Any extra filling can be spread overtop of the peppers or in the bottom of the dish

7. Top with shredded cheese

8. Bake for 1hr


Substitutions:


Dairy free: omit cheese


Whole30/Paleo: omit cheese, substitute cauliflower rice for minute rice


Keto: substitute cauliflower rice for minute rice
